You can make party pinwheels by spreading flavored cheese spreads on a flour tortilla, roll up, refrigerate for about 30 minutes, then slice. Alouette Sundried Tomato and Basil makes the best pinwheels, but any kind of flavored cream cheese type spread would probably do. You can also add a thin slice of deli meat, ham or smoked turkey. These are delicious, and look "fancy", they'll be impressed, lol!

I've done those; my mother makes them for parties often. It's pretty easy to plow through a couple dozen by yourself, though there are some consequences a couple hours later.

Some comments:

I've never wrapped them in bacon - bacon bits in the filling works fine and would be easier.

I don't remember if I used cream cheese. Maybe I did. Probably oughta have some mexican-ish cheese in there, too.

The cooking time affects how spicy hot they end up being. Cook longer for less heat; cook less for more heat.

Don't rub your eyes while preparing them.

Good point- peppers can be nasty if you rub your eyes... who wants to go to a party with red puffy eyes, looking like you've been crying for hours .

Here's a great one I'd forgotten about until last night. I was grocery shopping and the pomegranate seeds were reduced so I grabbed them. It might not fit Lioness's criteria though but then again, if you happen to have the ingredients...

(can be multiplied as much as you like)

100g pomegranate seeds
1 medium white onion, finely chopped
1 tablespoon fresh coriander leaves, finely chopped (can use the ready chopped ones in oil)
1 ripe mango, finely chopped
Juice of 1 lime
Salt to taste

Just mix it all together and enjoy! My brother introduced me to it a few years back. It tastes out of this world and you will want to keep eating it until there's none left! And it's super healthy too! :)

It does! I don't know if I've ever seen just pomegranate seeds for sale but I'm gonna look! I don't think it's too hard to get them out of the fruit anyway. Definitely going to try this.

Yep, it sounds amazingly delicious. Let us know how you like it!


It's not hard to get the seeds out. Just time consuming. And messy. But sooooo worth it!

Once you remove them, you can keep them in the fridge for a few days at least. So the recipe sounds like a good one to do when you've got at least a day or two notice before the par-tay.



Spechulle,

What do you think about using red onion instead of white/yellow? You wouldn't get the interesting color contrast of the white onion w/ the pom color... but I wonder if there's a slight flavor difference.

I would think red onion is just as tasty :) Not sure really what the taste difference is anyway between the two :)

I'd be interested to know how you all get on with this one :)

Also, I can't always get the coriander and dried just isn't the same. Does anyone have any tips about freezing it? I luuuurrrve coriander :)

My Fireman made these as an appetizer last night--


Thai Wraps
Serves 6

1 Lb pork tenderloin, trimmed of silver skin and fat, cut into 1-inch chunks
2 1/2 tablespoons fish sauce (check your Asian food aisle)
1 tablespoon white rice
1/4 cup chicken broth
2 shallots, peeled and sliced into thin rings
3 tablespoons fresh lime juice
2 teaspoons sugar
1/4 teaspoon red pepper flakes
3 Tablespoons fresh mint, rough chopped
3 tablespoons fresh cilantro, rough chopped
1 head Bibb lettuce, washed, dried, leaves separated and left whole

1. Place pork chunks on plate in single layer. Freeze meat until firm but still pliable, 15-20 minutes
2. Place half of meat in food processor and pulse until coarsely chopped, 5-6 one second pulses. Empty meat to medium bowl and process remaining meat. Stir in 1 tablespoon fish sauce and refrigerate to marinate 15 minutes.
3. Heat rice dry skillet, stirring constantly until toasted golden brown. Transfer to bowl to cool. Grind in mortar and pestle, or spice grinder until it resembles coarse meal. Note: Do not skip this ingredient--it is important to the flavor and texture of the dish.
4. Bring broth to simmer in skillet over medium-high heat. Add pork and cook, stirring often until half the pork is no longer pink, about 2 minutes. Sprinkle in 1 teaspoon rice powder and continue to cook until no longer pink--Do not brown. Transfer to bowl and cool 10 minutes.
5 Add remaining 1 1/2 tablespoons fish sauce, remaining rice powder, shallots, lime juice, sugar, red pepper flakes, mint, and cilantro to pork, toss to combine. Serve in lettuce leaves.
